- 2 tablespoons garlic, minced
- 1 shallot, chopped
- 4 tablespoons basil tomato pesto
- 1/2 cup heavy cream
- 1 cup chopped spinach
- 1 box fusilli pasta
- 1 tablespoon grated parmesan
Instructions
- Boil the fusilli pasta al dente and reserve some pasta water.
- In a skillet, heat olive oil over medium heat.
- Add garlic and shallot and sauté until fragrant.
- Reduce heat to low and stir in basil tomato pesto.
- Incorporate the cream, then mix in some reserved pasta water, adjusting to desired consistency.
- Once simmering, add spinach and the cooked pasta.
- Top with grated parmesan before serving.
Notes
For a gourmet touch, consider adding toasted pine nuts or sun-dried tomatoes. Use fresh ingredients for best flavor.
