Description
A simple yet delicious sardine pâté that brings together flavors of summer and conviviality.
Ingredients

- 3.75 oz canned sardine fillets in olive oil (about one can)
- ⅓ cup unsalted butter, cubed
- ½ medium onion, chopped
- A small bunch of parsley, roughly chopped
- The juice of half a lemon
- Salt and pepper, to taste
- 1 to 3 tsp tomato paste (optional)
Instructions
- In a food processor, place the drained sardine fillets (without the oil) and add lemon juice, chopped onion, parsley, butter cubes, and tomato paste if using.
- Blend for a few seconds until you have a coarse mixture.
- Add a spoonful of reserved olive oil and continue blending until smooth.
- Season with salt and pepper to taste.
- If too thick, add more olive oil and pulse until desired texture is achieved.
- Serve on toasted bread or crackers.
Notes
Adjust seasoning according to the sardines’ taste. Fresh ingredients yield the best results. Experiment with spices for variations.
