Description

A simple yet delicious sardine pâté that brings together flavors of summer and conviviality.


Ingredients

Scale
  • 3.75 oz canned sardine fillets in olive oil (about one can)
  • ⅓ cup unsalted butter, cubed
  • ½ medium onion, chopped
  • A small bunch of parsley, roughly chopped
  • The juice of half a lemon
  • Salt and pepper, to taste
  • 1 to 3 tsp tomato paste (optional)

Instructions

  1. In a food processor, place the drained sardine fillets (without the oil) and add lemon juice, chopped onion, parsley, butter cubes, and tomato paste if using.
  2. Blend for a few seconds until you have a coarse mixture.
  3. Add a spoonful of reserved olive oil and continue blending until smooth.
  4. Season with salt and pepper to taste.
  5. If too thick, add more olive oil and pulse until desired texture is achieved.
  6. Serve on toasted bread or crackers.

Notes

Adjust seasoning according to the sardines’ taste. Fresh ingredients yield the best results. Experiment with spices for variations.
