Ingredients

- 2 ripe mangoes, diced
- 2 passion fruits, pulp scooped
- 250g mascarpone
- 1 cup strong brewed coffee, cooled
- 200g ladyfinger biscuits
- 100g sugar
- 3 eggs, separated
- 2 tablespoons cocoa powder
Instructions
- Prepare a strong coffee and let it cool.
- In a bowl, beat the egg yolks with the sugar until creamy.
- Gently mix in the mascarpone.
- Whip the egg whites to stiff peaks and fold them gently into the mixture.
- Dip the ladyfinger biscuits into the coffee and place them at the bottom of a dish.
- Spread a layer of the mascarpone mixture over the biscuits.
- Add pieces of mango and passion fruit on top.
- Repeat the layers until the ingredients are used up.
- Finish with a layer of mascarpone and dust with cocoa powder.
- Refrigerate for at least 240 minutes before serving.
Notes
For best results, let the tiramisu rest overnight. You can vary the fruits to your preference.
