- 1 onion, finely sliced
- 4 large eggs
- 2 cups fresh spinach

Instructions
- Heat olive oil in a large skillet over medium heat. Add the sliced potatoes and onions, cooking until tender. Drain excess oil.
- In a bowl, beat the eggs, then incorporate the cooked potatoes, onions, and fresh spinach. Season with salt and pepper.
- Pour the mixture back into the skillet, cooking on low heat for about 5 to 7 minutes, until the bottom is set.
- Gently flip the tortilla to cook the other side or finish under the broiler until golden.
- Let cool slightly before slicing and serving.
Notes
Letting the tortilla rest after cooking allows flavors to integrate. Try adding cheese or fresh herbs for extra flavor.
