Description

  • 1 onion, finely sliced
  • 4 large eggs
  • 2 cups fresh spinach
  • Olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the sliced potatoes and onions, cooking until tender. Drain excess oil.
  2. In a bowl, beat the eggs, then incorporate the cooked potatoes, onions, and fresh spinach. Season with salt and pepper.
  3. Pour the mixture back into the skillet, cooking on low heat for about 5 to 7 minutes, until the bottom is set.
  4. Gently flip the tortilla to cook the other side or finish under the broiler until golden.
  5. Let cool slightly before slicing and serving.

Notes

Letting the tortilla rest after cooking allows flavors to integrate. Try adding cheese or fresh herbs for extra flavor.
