Description

Delicate and airy French ladyfingers, perfect for desserts or enjoyed alone.


Ingredients

  • 4 large eggs
  • 1 pinch of salt
  • 120 g granulated sugar
  • 80 g all-purpose flour
  • 45 g cornstarch
  • 1/2 teaspoon natural vanilla extract (optional)
  • Icing sugar for dusting

Instructions

  1. Separate the eggs and set aside the yolks.
  2. Beat the egg whites with the pinch of salt and vanilla extract if desired.
  3. Gradually add the sugar, mixing carefully until a shiny, smooth meringue forms.
  4. Gently fold the yolks into the egg whites using a spatula.
  5. Sift the flour and cornstarch together, then gently incorporate into the mixture.
  6. Fill a piping bag with the batter and pipe strips onto a parchment-lined baking sheet, leaving space in between.
  7. Dust the tops of the biscuits with sifted icing sugar.
  8. Bake in a preheated oven at 180°C for 10 to 15 minutes until golden.
  9. Allow to cool on a wire rack before storing in an airtight container.

Notes

For best results, ensure that the egg whites are clean and free from any grease. Experiment with flavor by adding citrus zest for extra taste.
