Delicious heart-shaped strawberry shortbread cookies that evoke sweet summer memories.

- 1 cup (227g) salted butter, softened
- 1/2 cup (60g) powdered sugar
- 1 1/2 cups (150g) dried strawberries, measured and blended
- 1 teaspoon vanilla extract
- 2 cups (240g) all-purpose flour
- 2 tablespoons (30ml) milk
- 1 cup (120g) powdered sugar for frosting
- 1 1/2 tablespoons milk for frosting
- 1/4 teaspoon vanilla extract for frosting
- 1 tablespoon dried strawberries, finely processed for frosting
Instructions
- Prepare the strawberry powder: Process dried strawberries until a fine powder is obtained. Reserve one tablespoon for the frosting.
- Cream the butter and sugar: Beat the butter and powdered sugar until smooth and creamy.
- Flavor the dough: Mix in the vanilla, milk, and strawberry powder until well combined.
- Chill the dough: Flatten the dough into a disk and refrigerate for 15 minutes for sharper shapes.
- Roll and cut the cookies: Roll out the dough to a 1/4 inch thickness. Cut into heart shapes and place on parchment-lined baking sheets.
- Bake in the oven: Bake at 325°F (163°C) for 13 to 15 minutes, until edges are lightly golden. Allow to cool completely.
- Frost the cookies: Whisk together frosting ingredients. Spread over cookies evenly and let set.
Notes
For a stronger strawberry flavor, adjust the amount of strawberry powder to your preference. If you prefer a crunchier texture, bake a minute or two longer.
