Description

Healthy version of traditional churros made with oat flour, offering a delightful texture and reduced sugar.

Ingredients

Scale
  • 1 cup water
  • 1 cup oat flour
  • 2 tablespoons coconut oil
  • ½ teaspoon monk fruit or sweetener of your choice
  • 1 egg
  • 2 tablespoons muscovado sugar
  • ½ teaspoon ground cinnamon
  • Oil spray (to taste)

Instructions

  1. In a pot, combine water and coconut oil, bringing to a boil.
  2. Remove from heat and add oat flour, stirring until well combined.
  3. Add monk fruit or your preferred sweetener.
  4. Return the pot to low heat for about 45 seconds until the dough pulls away from the sides.
  5. Let cool slightly, then transfer dough to a mixing bowl.
  6. On low speed, mix to further cool the dough, then gradually add the egg until the desired texture is achieved.
  7. Place the dough in a piping bag with a star tip.
  8. On an air fryer tray lined with parchment paper, pipe churros, allowing space between each for air circulation.
  9. Lightly spray churros with cooking oil.
  10. Cook in the air fryer at 200°C (390°F) for 5 minutes.
  11. Gently turn them over and spray again for a golden color, continuing to cook for 4 to 6 minutes.
  12. Immediately cover warm churros with a mixture of muscovado sugar and ground cinnamon.

Notes

Churros are best enjoyed fresh but can be stored in an airtight container in the fridge to maintain crispness.
