Description
Healthy version of traditional churros made with oat flour, offering a delightful texture and reduced sugar.
Ingredients

- 1 cup water
- 1 cup oat flour
- 2 tablespoons coconut oil
- ½ teaspoon monk fruit or sweetener of your choice
- 1 egg
- 2 tablespoons muscovado sugar
- ½ teaspoon ground cinnamon
- Oil spray (to taste)
Instructions
- In a pot, combine water and coconut oil, bringing to a boil.
- Remove from heat and add oat flour, stirring until well combined.
- Add monk fruit or your preferred sweetener.
- Return the pot to low heat for about 45 seconds until the dough pulls away from the sides.
- Let cool slightly, then transfer dough to a mixing bowl.
- On low speed, mix to further cool the dough, then gradually add the egg until the desired texture is achieved.
- Place the dough in a piping bag with a star tip.
- On an air fryer tray lined with parchment paper, pipe churros, allowing space between each for air circulation.
- Lightly spray churros with cooking oil.
- Cook in the air fryer at 200°C (390°F) for 5 minutes.
- Gently turn them over and spray again for a golden color, continuing to cook for 4 to 6 minutes.
- Immediately cover warm churros with a mixture of muscovado sugar and ground cinnamon.
Notes
Churros are best enjoyed fresh but can be stored in an airtight container in the fridge to maintain crispness.
