A delicious and comforting twist on the classic French Croque-Monsieur, featuring crispy bread, creamy béchamel, mushrooms, and savory chicken ham.
Ingredients

- 4 slices of pain de mie (white bread)
- 4 slices of jambon de poulet (chicken ham)
- 200g fresh champignons de Paris (mushrooms)
- 100g Gruyère or Emmental cheese
- 30g butter
- 30g flour
- 300ml milk
- Salt to taste
- Black pepper to taste
- Nutmeg, pinch
Instructions
- Preheat your oven to 200°C (392°F).
- In a saucepan, melt the butter and add the flour to make a roux.
- Gradually add the milk while whisking until you have a smooth béchamel. Season with salt, pepper, and a pinch of nutmeg.
- In a skillet, sauté the sliced mushrooms until they are golden.
- On one slice of bread, spread a layer of béchamel, add chicken ham, sautéed mushrooms, and a slice of cheese.
- Top with another slice of bread, spreading béchamel and cheese on top.
- Repeat for remaining sandwiches.
- Bake for about 15-20 minutes, until golden and crispy.
- Serve hot.
Notes
For an extra crispy finish, brush the top of the sandwiches with a little melted butter before baking. Consider using a mix of Gruyère and Emmental for added flavor.
