Description

Elegant and vibrant pomegranate mousse domes that capture the essence of fresh fruit with a rich and light texture.


Ingredients

  • 2 cups heavy cream (whipped for texture)
  • 1/2 cup fresh pomegranate juice
  • 1 tablespoon gelatin
  • 3 oz white chocolate (melted)
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh pomegranate juice
  • 1/4 cup sugar
  • 1 tablespoon gelatin
  • 1 tablespoon lemon juice

Instructions

  1. In a bowl, whip the heavy cream until stiff peaks form. Set aside.
  2. In a separate bowl, dissolve the gelatin in warm pomegranate juice and let it sit for 5 minutes.
  3. In a saucepan, melt the white chocolate and incorporate the sugar until fully dissolved.
  4. Add the vanilla extract to the melted white chocolate mixture and stir until smooth.
  5. Gently fold the white chocolate mixture into the whipped cream, then carefully incorporate the gelatin mixture.
  6. Pour the mousse mixture into dome molds and refrigerate for 4 to 6 hours or until set.

Notes

Use silicone molds for easier demolding. Consider garnishing with pomegranate seeds for a touch of elegance.
