Ingredients

- 2 cups heavy cream (whipped for texture)
- 1/2 cup fresh pomegranate juice
- 1 tablespoon gelatin
- 3 oz white chocolate (melted)
- 1/4 cup sugar
- 1 teaspoon vanilla extract
- 1 cup fresh pomegranate juice

- 1 tablespoon gelatin
- 1 tablespoon lemon juice
Instructions
- In a bowl, whip the heavy cream until stiff peaks form. Set aside.
- In a separate bowl, dissolve the gelatin in warm pomegranate juice and let it sit for 5 minutes.
- In a saucepan, melt the white chocolate and incorporate the sugar until fully dissolved.
- Add the vanilla extract to the melted white chocolate mixture and stir until smooth.
- Gently fold the white chocolate mixture into the whipped cream, then carefully incorporate the gelatin mixture.
- Pour the mousse mixture into dome molds and refrigerate for 4 to 6 hours or until set.
Notes
Use silicone molds for easier demolding. Consider garnishing with pomegranate seeds for a touch of elegance.
