Description

A colorful and fresh vegetable cake, perfect for outdoor picnics or as an appetizer before dinner, made with layers of grated vegetables and fresh cheese.


Ingredients

  • 2 Carrots, grated
  • 2 Zucchinis, grated
  • 1 Bell Pepper, diced
  • 1 Cucumber, diced
  • 200g Fresh Cheese
  • Fresh Herbs (Basil, Chives, or Parsley)
  • Juice of 1 Lemon
  • Salt and Pepper, to taste

Instructions

  1. Grate the carrots and zucchinis.
  2. Dice the bell pepper and cucumber.
  3. In a bowl, mix the fresh cheese with herbs, lemon juice, salt, and pepper.
  4. In a mold, alternate layers of grated vegetables and cheese mixture.
  5. Refrigerate for a few hours before serving.
  6. Demold and serve chilled.

Notes

Choose seasonal vegetables for variety and flavor enhancement. Wrap the mold with plastic wrap for easy demolding.
