A classic French dessert featuring layers of coffee-soaked sponge, chocolate cream, and fresh cream.

- 200g biscuits cuillère
- 250g chocolate noir
- 250g crème fraîche
- 200g butter
- 150g sugar
- 4 eggs
- 300ml strong coffee
- 90ml coffee liqueur
- 1/2 vanilla bean
- 70g almond powder
Instructions
- Prepare the coffee and mix it with the coffee liqueur.
- Melt the dark chocolate in a bain-marie.
- In a bowl, beat the softened butter with the sugar until creamy.
- Add the eggs one by one while continuing to whisk.
- Incorporate the melted chocolate into the mixture.
- Line a mold with the coffee-soaked biscuits.
- Pour a layer of the chocolate mixture, then repeat with the other layers.
- Finish with a layer of fresh cream and refrigerate for at least 4 hours before serving.
Notes
For best results, use high-quality dark chocolate and allow the cake to rest overnight for flavors to meld.
