Description

A classic French dessert featuring layers of coffee-soaked sponge, chocolate cream, and fresh cream.


Ingredients

  • 200g biscuits cuillère
  • 250g chocolate noir
  • 250g crème fraîche
  • 200g butter
  • 150g sugar
  • 4 eggs
  • 300ml strong coffee
  • 90ml coffee liqueur
  • 1/2 vanilla bean
  • 70g almond powder

Instructions

  1. Prepare the coffee and mix it with the coffee liqueur.
  2. Melt the dark chocolate in a bain-marie.
  3. In a bowl, beat the softened butter with the sugar until creamy.
  4. Add the eggs one by one while continuing to whisk.
  5. Incorporate the melted chocolate into the mixture.
  6. Line a mold with the coffee-soaked biscuits.
  7. Pour a layer of the chocolate mixture, then repeat with the other layers.
  8. Finish with a layer of fresh cream and refrigerate for at least 4 hours before serving.

Notes

For best results, use high-quality dark chocolate and allow the cake to rest overnight for flavors to meld.
