Delicious malasadas, a sweet and fluffy pastry with a crispy exterior, perfect for creating family memories and traditions.


Ingredients

  • 1 packet active dry yeast (1/4 oz. or 7 g)
  • 1 tablespoon sugar
  • 1/3 cup warm water
  • 8 cups all-purpose flour
  • 1/2 cup sugar
  • 1 teaspoon salt
  • 2 cups scalded milk
  • 1/2 cup butter (melted)
  • 8 large eggs (beaten)
  • Oil (for frying)
  • Sugar (for coating)

Instructions

  1. Dissolve the yeast and 1 tablespoon of sugar in warm water.
  2. In a large bowl, mix the flour, sugar, and salt, then create a well in the center.
  3. Add the milk, melted butter, eggs, and yeast mixture into the well.
  4. Mix until a soft and smooth dough forms.
  5. Cover the bowl and let the dough rise until doubled in volume, about 60 minutes.
  6. Heat oil to 350°F (176°C).
  7. Shape the dough into round disks, leaving a small indentation in the center.
  8. Carefully drop the disks into the hot oil and fry until golden brown.
  9. Remove and drain on paper towels, then toss in sugar.

Notes

Ensure the oil temperature is correct for best frying results. Let malasadas cool slightly before coating in sugar for perfect crystallization.
