Ingredients

- 400 g of cebolla amarilla (about 2 medium onions)
- 150 g of pimentón verde (1 medium green pepper)
- 150 g of pimentón rojo (1 medium red pepper)
- 4 branches of cebolla larga (spring onions)
- 1 bunch of cilantro
- 2 ajíes dulces (sweet peppers of your choice)
- 1 ají picante (spicy pepper of your choice)
- 2 cups (500 ml) of apple cider vinegar (or fruit vinegar)
- 2 tsp of salt
- 1 tsp of pepper
- ½ tsp of sugar
Instructions
- Combine the onions, green pepper, red pepper, spring onions, and a good amount of chopped cilantro in a large bowl.
- Liquefy the spicy pepper, sweet peppers, a bit of cilantro, and ½ cup of vinegar in a blender.
- Add the liquid pepper mixture to the large bowl with the other ingredients.
- Use the remaining vinegar (375 ml), or 1½ cups, to rinse the sides of the blender and pour it into the bowl.
- Incorporate the salt, pepper, and sugar, then mix well until all ingredients are combined.
- Transfer the Colombian hot pepper sauce into glass jars and store them in the refrigerator.
- Note that the flavor of the pepper will improve over time as the ingredients meld together.
Notes
For best flavor, let the sauce rest for a week in the refrigerator before using. Adjust the heat according to your preference by modifying the type and amount of spicy pepper.
