A simple and delicious Bolognaise recipe that evokes warm memories and brings family together around the table.

- 1/4 cup extra virgin olive oil
- 1 medium onion, chopped
- 2 cloves garlic, peeled and chopped
- 1 stalk celery, chopped
- 1 carrot, chopped
- 1 pound ground beef
- 2 cans (14 oz each) crushed cherry tomatoes
- 1/4 cup flat-leaf parsley, chopped
- 8 leaves fresh basil, chopped
- Salt and freshly ground black pepper, to taste
- 1/4 cup freshly grated Pecorino Romano cheese
- 1 pound pasta (such as mezzi rigatoni or pappardelle)
Instructions
- Heat the olive oil in a large skillet. Once nearly smoking, add the onion and garlic. Sauté over medium heat until the onions are very tender, about 8 minutes.
- Add the celery and carrot and sauté for an additional 5 minutes.
- Increase the heat to high and incorporate the ground beef. Sauté, breaking up any large pieces, until the meat is no longer pink, about 10 minutes.
- Stir in the tomatoes, parsley, and basil. Simmer over low heat until the sauce thickens, about 30 minutes. Season with salt and pepper.
- Meanwhile, bring a large pot of water to a boil over high heat. Add a generous amount of salt.
- Add the pasta and cook for 2 minutes less than the recommended time, about 8 to 9 minutes.
- Using tongs, incorporate the pasta directly from the boiling water into the sauce.
- Serve the dish with a drizzle of olive oil and a sprinkle of cheese, if desired.
Notes
For optimal flavor, allow the sauce to simmer longer. Adjust seasoning to taste and feel free to add your personal touch with additional herbs or spices.
