Ingredients

- 200 ml heavy cream
- 100 ml whole milk
- 1 tablespoon unsalted butter
- 1 tablespoon all-purpose flour
- Salt, to taste
- Freshly ground black pepper, to taste
- 1 teaspoon smoked paprika
- 1/2 teaspoon Dijon mustard
Instructions
- Melt the butter in a heavy-bottom saucepan over medium heat until it froths slightly, without coloring.
- Add the flour and whisk vigorously for about 1 minute to form a golden roux.
- Pour in the milk gradually while whisking constantly, then incorporate the cream in the same manner.
- Continue whisking until the mixture is perfectly smooth and slightly thickened (about 2-3 minutes).
- Reduce the heat to low and add the Dijon mustard and smoked paprika.
- Gradually incorporate the grated cheddar in small handfuls, stirring continuously until fully melted.
- Season with salt and freshly ground black pepper to taste.
- Let simmer gently for 1-2 minutes more for flavors to meld.
- Serve hot in a bowl alongside crispy fries.
