Ingredients

  • 200 ml heavy cream
  • 100 ml whole milk
  • 1 tablespoon unsalted butter
  • 1 tablespoon all-purpose flour
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon Dijon mustard

Instructions

  1. Melt the butter in a heavy-bottom saucepan over medium heat until it froths slightly, without coloring.
  2. Add the flour and whisk vigorously for about 1 minute to form a golden roux.
  3. Pour in the milk gradually while whisking constantly, then incorporate the cream in the same manner.
  4. Continue whisking until the mixture is perfectly smooth and slightly thickened (about 2-3 minutes).
  5. Reduce the heat to low and add the Dijon mustard and smoked paprika.
  6. Gradually incorporate the grated cheddar in small handfuls, stirring continuously until fully melted.
  7. Season with salt and freshly ground black pepper to taste.
  8. Let simmer gently for 1-2 minutes more for flavors to meld.
  9. Serve hot in a bowl alongside crispy fries.
