Ingredients

- 500g chicken, diced
- 100g cashews
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1 tablespoon soy sauce
- 1 teaspoon honey
- Sweet spices to taste (cinnamon, nutmeg, etc.)
- Salt and pepper to taste
- Fresh coriander for garnish
Instructions
- In a pan, heat olive oil over medium heat.
- Add onion, garlic, and ginger; sauté until translucent.
- Add the chicken and cook until golden brown.
- Stir in cashews, soy sauce, honey, and sweet spices.
- Cook for a few more minutes until chicken is cooked through and coated in sauce.
- Season with salt and pepper.
- Serve hot, garnished with fresh coriander.
Notes
For a perfect result, cook the chicken in batches if necessary to avoid overcrowding the pan. Adjust the sweetness with more or less honey to taste.
