Ingredients

  • 1 sachet of yeast
  • 3 tablespoons of olive oil
  • 1 teaspoon of sugar

  • 40g of tomato coulis
  • 1 slice of chicken breast
  • 5 pitted black olives
  • 30g of grated Gruyère cheese
  • 1/4 of the dough from the original preparation
  • 110g of tuna
  • 3 tablespoons of fresh cheese
  • Fresh herbs, such as persillade
  • 2 egg yolks, for brushing
  • Sesame seeds for topping
  • Lettuce leaves
  • 15 cherry tomatoes
  • 3 slices of cheddar cheese
  • 1/4 of the dough prepared earlier
  • Mayonnaise
  • Cherry tomatoes, halved
  • 1/2 log of goat cheese, crumbled
  • Fried onions for added crunch
  • Grated mozzarella for stuffing

Instructions

  1. For mini pizzas: In a bowl, combine one glass of flour, sugar, salt, yeast, and warm water. Mix thoroughly. Cover with plastic wrap and let it rest for ten minutes. Incorporate olive oil and two glasses of flour. Knead to form a smooth dough and let rise for 30 minutes. Divide and roll out pieces, cutting circles. Top with tomato coulis, chicken, Gruyère, and olives. Bake for 20 minutes at 180°C until golden.
  2. For mini burgers: Take a portion of the dough and form small balls of around 20g each. Let rise for 30 minutes. Preheat oven to 180°C. Brush with egg yolk and sprinkle with sesame seeds. Bake for 15-20 minutes. Mix tuna, fresh cheese, and herbs for filling. Slice baked mini burgers, add mayonnaise, lettuce, tuna mixture, and cheddar. Secure with cherry tomatoes.
  3. For batbots: Roll out the dough to 1 cm thickness. Cut into rounds. Rest for 15 minutes. Heat a skillet and cook for 5 minutes on each side. Stuff with mayonnaise, salad, tomatoes, and goat cheese, topped with fried onions.
  4. For savory buns: Shape the dough into 30g balls, flatten, fill with tuna, tomato coulis, and mozzarella. Seal edges and rest for 15 minutes. Brush with egg yolk and sprinkle sesame seeds. Bake at 180°C for 15 minutes.

Notes

Consider serving the mini pizzas and burgers hot, and store leftovers in an airtight container for up to two days.
