Description

A delightful stuffed bread filled with meats and cheeses, perfect for gatherings.

Ingredients

Scale
  • 1 3/4 cups (225 g) all-purpose flour
  • 1 teaspoon (4 g) instant yeast
  • 2/3 cup (160 ml) warm water
  • 1 tablespoon (15 ml) olive oil
  • 1/2 tablespoon (10 g) granulated sugar
  • 1/2 teaspoon salt
  • 9 oz (255 g) assorted meats
  • 9 oz (255 g) assorted cheeses
  • 1 beaten egg (for glaze)
  • 1 tablespoon (5 g) grated Pecorino or Parmesan cheese (optional, for topping)

Instructions

  1. Prepare the dough. In a large bowl, combine the flour, yeast, water, olive oil, sugar, and salt. Mix until a dough starts to form.
  2. Knead on a floured surface until smooth and elastic.
  3. Place the dough in an oiled bowl, cover with plastic wrap, and let rise until doubled in size (about 60 to 90 minutes).
  4. Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
  5. Roll out the dough into a rectangle of 10 x 16 inches (25 x 40 cm).
  6. Add a layer of Provolone cheese, followed by Milano salami, Golfetta salami, and shredded mozzarella.
  7. Roll the dough, tucking the edges in to seal well.
  8. Brush the loaf with the beaten egg, then sprinkle with Parmesan or Pecorino, black pepper, and red pepper flakes (if desired).
  9. Slash a few vents on top of the loaf and bake for 20 to 25 minutes, until golden brown.
  10. Serve warm!

Notes

Use ambient temperature ingredients for better dough incorporation. For a crisper crust, check for air bubbles before baking.
