A delightful stuffed bread filled with meats and cheeses, perfect for gatherings.
Ingredients

- 1 3/4 cups (225 g) all-purpose flour
- 1 teaspoon (4 g) instant yeast
- 2/3 cup (160 ml) warm water
- 1 tablespoon (15 ml) olive oil
- 1/2 tablespoon (10 g) granulated sugar
- 1/2 teaspoon salt
- 9 oz (255 g) assorted meats
- 9 oz (255 g) assorted cheeses
- 1 beaten egg (for glaze)
- 1 tablespoon (5 g) grated Pecorino or Parmesan cheese (optional, for topping)
Instructions
- Prepare the dough. In a large bowl, combine the flour, yeast, water, olive oil, sugar, and salt. Mix until a dough starts to form.
- Knead on a floured surface until smooth and elastic.
- Place the dough in an oiled bowl, cover with plastic wrap, and let rise until doubled in size (about 60 to 90 minutes).
- Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
- Roll out the dough into a rectangle of 10 x 16 inches (25 x 40 cm).
- Add a layer of Provolone cheese, followed by Milano salami, Golfetta salami, and shredded mozzarella.
- Roll the dough, tucking the edges in to seal well.
- Brush the loaf with the beaten egg, then sprinkle with Parmesan or Pecorino, black pepper, and red pepper flakes (if desired).
- Slash a few vents on top of the loaf and bake for 20 to 25 minutes, until golden brown.
- Serve warm!
Notes
Use ambient temperature ingredients for better dough incorporation. For a crisper crust, check for air bubbles before baking.
