- 20 g salted butter
- 1 tbsp brown sugar
- 1 pinch cinnamon (optional)
- Juice of 1 lemon
- 100 g granulated sugar
- 40 g salted butter (cold, diced)
- 100 ml heavy cream (warmed)
- 250 g mascarpone (cold)
- 2 fresh eggs (at room temperature)
- 60 g granulated sugar
- 1 packet vanilla sugar or 1 tsp liquid vanilla extract
- 100 g speculoos cookies (or shortbread)
- Unsweetened cocoa powder (for finishing)
Instructions
- Prepare the sautéed apples: Peel and dice the apples, adding lemon juice to prevent browning. Sauté in salted butter until tender.
- Create the salted caramel: Melt sugar over medium heat, then add cold butter and cream.
- Make the mascarpone cream: Whisk egg yolks with sugar, add mascarpone, and gently fold in the whipped egg whites.
- Assemble the verrines: Crumble speculoos, add mascarpone cream, then apples and caramel. Repeat if possible, finishing with cream.
- Chill: Cover verrines with plastic wrap and refrigerate for at least 4 hours.
Notes
Consider adding chopped nuts for extra crunch. Fresh eggs yield a smoother cream, and it’s best to prepare this dessert a day in advance for the best flavor development.
